Jenny Westerkamp, RD, CSSD

Jenny began her career during her senior year of college when she started All Access Internships (AAI) in April 2008, and since then has dedicated to meeting the needs of the dietetic student community. She currently works as the Team Nutrition Consultant for the Chicago Bulls, runs All Access Internships, and coaches new RDs at Jenny Westerkamp Coaching. 

Previously, Jenny was the Minor League Lead Nutrition for the Chicago Cubs. Before that, she was the Nutritionist for Kitchfix, a meal delivery, prepared foods, and catering company in Chicago. For 4 years, she was the Senior Sports Nutritionist for SportFuel, Inc. where she worked with the Rockford IceHogs, Chicago Blackhawks, and NBA Development League. She is also the co-author of Green Foods for Men.

She has been interviewed for a variety of media outlets including Good Morning America, Today’s Dietitian, and Men’s Fitness. Jenny was the President of the Chicago Food and Nutrition Network. 

Jenny graduated with high honors from the University of Illinois, Urbana-Champaign and earned a bachelor’s degree in Food Science and Human Nutrition. She completed her dietetics training at Massachusetts General Hospital in Boston, Massachusetts.

Katie Proctor, MBA, RD
Coach + Original Co-Founder

Katie is one of the original All Access Internships co-founders and, as a coach, remains dedicated to students in their internship search and application process. Katie has been a highly sought after AAI coach for more than 5 years. Throughout her undergraduate career, Katie served on the selections committee of many highly competitive organizations and advisory boards, and provides a unique perspective on how to work application letters and interviews. She also served on the intern selection committee during her dietetic internship. Katie enjoyed a career in branding, marketing and communications roles at a global PR agency, Fortune 500 CPG company and organic food start-up. Currently, she runs her own business as a brand marketing strategist and highly sought after mentor to those looking to turn their passion for wellness into a career they love. In addition to her work with RD’s, she is also the Brand Manager for HealthyGlow.Co, a community and resource that encourages women to improve their relationship with their bodies and find joy in food and fitness again. 

Katie holds a B.S. in Dietetics and minors in business and Spanish from Kansas State University, where she graduated cum laude with honors. She completed her dietetic internship at Vanderbilt University Medical Center in Nashville, TN.

Adrienne Mangroo, RD, CNSC

Adrienne earned her Bachelor of Science in Nutrition from Drexel University in Philadelphia and completed her dietetic internship at the VA San Diego Healthcare System, her top DI choice. As a Certified Nutrition Support Clinician, she serves medical and surgical intensive care units and leads the Nutrition Support Team at Denver, Colorado’s Rocky Mountain Regional Veterans Affairs (VA) Medical Center.

Adrienne’s experience ranges from serving stroke and neurosurgery patients in a neuroscience ICU to providing nutrition care in long-term care and rehabilitation centers. She has been a part of the AAI Team since 2013, and looks forward to helping even more students GET MATCHED!

Katie Braun, MS, RD, LD, CNSC

Katie earned her Bachelor of Science in Nutrition from Indiana University of Pennsylvania and completed her combined Masters/Dietetic Internship (DI) at Texas Woman’s University and the Michael E DeBakey Veterans Affairs (VA) Medical Center. She began her career with the Houston VA specializing in medical nutrition therapy for the inpatient setting and nutrition support for the critically ill.  During her time in Houston, Katie had the opportunity to precept interns for almost 10 years.  She was awarded the 2016 Academy of Nutrition and Dietetics, Nutrition and Dietetic Educators and Preceptors (Area 4) Outstanding Preceptor Award and the 2013 Outstanding Preceptor Award (Newcomer) at the local and state level. She now works at the VA Pittsburgh Health Care System as the medical ICU and cardiac registered dietitian.  She is the site liaison for VA Pittsburgh and the University of Pittsburgh dietetic interns.

While at the Houston VA, Katie served each year as an interview team member for the DI program selection and also severed as a member of the dietetic internship program selection committee for 5 years, chairing the committee twice.  That means she’s read over 300+ personal statements!! This opportunity has helped her better understand what internship directors are looking for in their top candidates.  Katie is excited for another coaching season and looks forward to helping applicants match with DI programs.

Susan Stalte, MBA, RD

Susan is a Pennsylvania-native and past AAI client who graduated from Immaculata University in 2014 with a bachelor’s degree in Nutrition & Dietetics. She was accepted into Meredith College’s Site Preceptor 2014-2015 Dietetic Internship class, a partial distance internship. With firsthand experience completing a distance program, Susan can directly relate to applicants exploring this pathway. As of 2018, Susan completed her MBA and graduated with high honors from Missouri Baptist University.

Currently, Susan oversees two long-term care facilities and works as a freelance consultant. Working as an AAI coach since early 2017, she is thrilled to continue to help students gain confidence in their application and achieve their career goals within the field of dietetics.

Laura Falconi, RD

Laura earned her Bachelor of Science from Clemson University in Food Science and Human Nutrition with a minor in Chemistry, and went on to complete her dietetic internship at Cornell University where she gained experience in clinical nutrition, food service management, community nutrition, and research.  She also holds a certificate in plant-based nutrition from the T. Colin Campbell Center for Nutrition Studies. Laura now works remotely for Noom, a weight loss app, where she interacts with users on a daily basis and works with them on their personal health goals. In her free time, Laura enjoys arranging flowers, yoga, and drinking coffee.

Moe Schlachter, MS, RD, LD, CDE

Moe Schlachter began his career as a chef in the New York City food industry. He earned  Moe is a Registered and Licensed Dietitian (RD, LD) and Certified Diabetes Educator (CDE).

Moe completed BS degrees in both Business Management and Nutrition at Brooklyn College in New York City and a Masters of Nutrition degree at Texas Woman’s University in Houston, TX. He completed his dietetic internship as Class Chairman at the Michael E. DeBakey VA Medical Center in Houston, TX. Moe is a Registered and Licensed Dietitian (RD, LD) and Certified Diabetes Educator (CDE).

Moe is the proud owner of Houston Family Nutrition, a clinical nutrition and culinary services company. He also holds an adjunct professor of nutrition appointment at San Jacinto College and makes routine television appearances sharing healthy and nutritious recipes with his Houston audience. He served as president of the Houston Academy of Nutrition and Dietetics and was recognized as Young Dietitian of the Year in 2015 by the Texas Academy of Nutrition & Dietetics. 

Moe has been coaching DI hopefuls with AAI since 2013. He specializes in career changers, culinary backgrounds, and VA applicants.
